Grilled Chicken Sandwich – Recipe

Ingredients:

– 2 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon cayenne pepper (optional, for some heat)
– 4 slices of your favorite sandwich bread (such as ciabatta, sourdough, or whole wheat)
– 4 lettuce leaves
– 4 tomato slices
– 4 slices of cheese (optional, such as cheddar or Swiss)
– 4 tablespoons mayonnaise
– 1 tablespoon Dijon mustard (optional)

Instructions:

1. Marinate the Chicken:
   – In a medium-sized bowl, combine olive oil, minced garlic, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Mix well to create the marinade.
   – Place the chicken breasts in a resealable plastic bag or a shallow dish, and pour the marinade over them. Make sure the chicken is evenly coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to infuse.

2. Preheat the Grill:
   – Preheat your grill to medium-high heat. You can also use a grill pan or stovetop griddle if you don’t have access to an outdoor grill.

3. Grill the Chicken:
   – Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 10 minutes.
   – Oil the grill grates or the griddle surface to prevent sticking. Place the chicken breasts on the preheated grill and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. Cooking time may vary depending on the thickness of the chicken breasts.

4. Toast the Bread:
   – While the chicken is grilling, lightly toast the bread slices on the grill or in a toaster.

   – Place a lettuce leaf on the mayo side of two bread slices.
   – Once the chicken is fully cooked, remove it from the grill and let it rest for a minute before slicing it into thin strips. Divide the sliced chicken evenly among the two bread slices with lettuce.
   – Top the chicken with tomato slices and cheese (if using).
   – Place the remaining two bread slices on top, mayo or mustard side down, to complete the sandwiches.
